Recipe Appertizer: Summerset Green With Avocado and roasted Walnuts (25 portions)
Ingredients:
- 6 packets of mixed salad
- 6 pc of oranges (medium sized)
- 10 pc of medium ripe avocados
- 50 pc cherry tomatoes
- 5 pc carrots
- 5 pc shallots
- Olive oil, Orange Juice, White vinegar, salt and pepper
Method:
- Wash and dry all greens and place into large mixing bowl
- Roast the walnuts in dry pan until golden brown (not burned)
- Filet oranges and keep separated
- Mix 1 part olive oil with one part orange juice until creamy consistence
- Add salt and white pepper to taste
- Drizzle dressing into salad and toss around until evenly covered
- Cut cherry tomatoes in half
- Cut shallots into thin slices
- Grate carrots
- Cut avocados in half and remove flesh, cut into cubes
- Assemble salad in salad bowl and serve
